With Tom's dedicated approach to local produce I suppose it was inevitable he would mhor_tom.jpgopen a bread shop (and fish shop) in Callander. He is using as locally sourced grains as possible, hand crafted doughs, and wonderful recipes reflecting Scotland's great heritage for breads. I particularly adore his fruit bread (maybe he calls it tealoaf) and they have wonderfully tempting pastries too.

He and his family have built up a top ranking reputation for amazing food and ambience at Monachyle Mhor and Mhor 84. Still with a working farm Tom and his team work with their own meat and game alongside other wonderful artisan produce. Mhor in all its forms reflects Tom's passion for good food and his superb skills in the kitchen. Here are some of his breads at the Royal Highland Show.

The Incorporation of Bakers "Baxters' of the City of Edinburgh is one of the Edinburgh Trades – existing since mediaeval times to promote the interests of specialist crafts and skills. The Incorporation of Bakers is now attracting new members and wants to help and promote high quality baking in Edinburgh. 

From Medieval times, craftsmen supported each other but increasingly they felt under pressure as their rights diminished and towns prospered, so their tactic was to band together more formally to create their own craft guilds. The Incorporated Trades of Edinburgh is such an organization, steeped in tradition and history and led by an elected Deacon and Boxmaster.

There were 15 Incorporations: Surgeons, Goldsmiths, Skinners, Furriers, Hammermen, Wrights, Masons, Tailors, Baxters, Fleshers, Cordiners, Weavers, Waulkers, Bonnetmakers & Dyers, Candlemakers and Barbers.

Given the origins of the Incorporated Trades it is arguably a very appropriate time to band together to resist deskilling, industrialization, Chorleywood bread process, not to mention all the additives and fast reactors that artisan breadmakers abhor.

This arable farm in the 'bread basket' of East Lothian was an early pioneer of wheat and oat varieties. Grandfather to the current McDowalls developed the world's first electric tractor there! Now they sow, grow, harvest and mill all on the farm!

They have built a small maltings to convert their barley into malt for making beer and whisky too. They have introduced a flour mill to make fully traceable Scottish flour, both organic and conventional. All their flour is grown locally and leaves Mugoswells with less than 5 food miles on the clock! What a fantastic enterprise for Scottish Baking, Real Bread Campaign and the Baxters! Member of the Traditional Cornmiller's Guild, they produce a range of traditional stone ground comestibles at this restored watermill. They have organic wholemeal flour used to make their Rustic Bites, along with bread, rye and oatmeal flours. They also have less usual peasemeal. Peasemeal is a soft yellow flour made from roasted yellow peas that is very versatile in soups, pates and dumplings or can be eaten like a porridge. Here is peasemeal pate - delicious. I discovered this bakery at the Shetland Food Fair 2016. Previously on SFG as Walls it has now been bought by an American with Shetland roots who is evolving the popular business to include amazing sourdoughs, artisan loaves, along with shortbreads, cookies and oatcakes. Re-opened (Sept 2016) under new ownership - and new name - the bonnie seasideab_bakery2 village of Aberdour has a new bakery. In the heart of the village, by the award-winning railway station and on the Fife Coastal Path it is a lovely addition to the community.

With delicious sourdough breads and a range of 'free from' products, there is an excellent selection of baked products, from the more traditional to lovely gluten free fruit bars and other artisan goodies.

Robert has justly won many awards for his amazing handcrafted pies and now also has his SALSA Accreditation. Exceptional artisan, hand raised meat pies with a variety of fillings.... traditional pork (with Ramsay's prize pork), Wild Scottish Venison & Savoury Pork, Chicken & Ham and more great ideas all the time! In 2006 Robert was one of 30 “chefs” representing the UK at Terra Madre in TurinMrCpress.jpg with Slow Food where he listened to farmers complaining about chefs, hotels and restaurants using mainly prime cuts of meat and not using lesser cuts of great meat – In other words NOT using the whole animal. On his return he decided to look at high quality hand-made pies. 

He contacted Andrew Ramsay of Ramsay’s of Carluke and ordered small quantities of pork as well as trotters to make fresh quality jelly. By 2011 he entered the British Pie Awards and won GOLD for his PORK PANCETTA and LEEK. 

In October 2012 he took 244 pies to Turin to Terra Madre where it all began six years before and had a great three days selling pies. It was wonderful to get such good direct feedback from so many international customers.

Aberfeldy Oatmeal and flours are available through selected farmshops. The business is now run by the Gray family with top quality Scottish oatmeal brought from Kelso. Their oatcakes won gold at the Great Taste awards. I particularly like the fact it is milled at Carrs Mills Kirkaldy as part of a lovely bit of city regeneration by the docks.

Founded by David Goodfellow & Margaret Steven in the centre of Broughty Ferry in 1897, Goodfellow & Steven is one of Scotland’s longest established bakers. Over a century old and still excellent- beautiful displays and seasonal treats. Shops across Tayside in Dundee, Blairgowrie, Broughty Ferry plus Edinburgh in Stockbridge (pictured). Their Dundee Cake, made with their traditional recipe is applying for PGI status (Protected Geographical Indication). It was invented in Dundee by Janet Keiller of marmalade fame in the late 1700's. This is a wonderful farm bakery on the road between Hillend and Crossgates. Easy to find and open Friday through to Sunday, they create a beautiful and delicious range of stoned baked, long fermentation loaves, sourdoughs - and don't forget the superb fruit loaf! They use organic flours and also locally milled flour, with sultanas, walnuts and other variations too but always natural ingredients. This is an absolute must for breadlovers and you can pick up some of their free range eggs from happy hens whilst there.

I first came across this wonderfully inspired cake making couple at the Country Living Show. Here she is with their beautiful stand. They create seasonal cakes and cookies plus bespoke orders for occasion cakes and all kinds of celebrations. Their stand was extremely popular - and no wonder!

Andrew Whitley is the author of Bread Matters and co-founder of the UK’s Real Bread Campaign.  Andrew campaigns with thoughtfulness and commitment for better quality in our daily bread and an end to the adulteration of the staff of life. 

Having heard him in action he is The Bread and Grains expert and his courses are highly authoritative. They have a well equipped Baking Studio, an organic small holding and an online shop - indeed there is so much going on, click on their weblink for more details!

He created one of the UK’s first organicartisan bakeries (the Village Bakery Melmerby in Cumbria) and ran it for more than 25 years. When traveling in Russia he was inspired by their sourdoughs and launched a range of naturally fermenting breads.

Studying Food Policy and increasingly concerned over the state of British bread, he and Veronica co-founded Breadshare Community-supported Bakery and continue their campaigning, their latest being Scotland The Bread.

Scotland The Bread is one of the innovative enlightened agriculture projects in a pilot programme supported by Funding Enlightened Agriculture. It aims to engage the creative energies of people throughout the food chain in participatory research and collective action to produce better home-grown flour and bread. See website for more details.
