Jock is a welcome regular at Gardening Scotland at Scottish Food Guide Pavilion and atjockjeanchristophe.jpg Royal Highland Show. A highly respected meat and game dealer with super butcher shop in Forres and online mail order too. In 1986 Jock's parents Mike & Sue Gibson bought the established butcher's shop as a direct outlet for their Edinvale Farm produce. Sadly missed, their dedication to high quality meat and Highland Cattle has carried on with Jock and his family

Jock is highly skilled and enthusiastic - he has even entertained and educated us on the finer points of beef at the Food and Drink Theatre at the Royal Highland Show! This estate is famous for its Hill Bred Pedigree Highland Cattle, on Slow Food Ark of Taste. They also rear Hebridean lamb and venison off the hill so a delicious range of local heritage meats available in their farm shop, along with home bakes and a range from other local producers.

They feature on the fabulous film The Steak Revolution http://steakrevolution.com as among the very best we have. Highland beef is world class.

As you wind  through the stunning scenery to Glengorm you will find their lovely farm shop and cafe - a popular haunt of walkers, cyclists and foodies, along with beautiful cottages available to rent and opportunities to hold weddings and events at Glengorm Castle itself.

Highland Cattle are famous on picture postcards, an icon of Scotland and instantlyglengorm2 recognisable as a true heritage breed, yet few are aware how they have become heavier and ‘developed’ to give larger carcass weight and bigger cuts. This Hill Bred Pedigree Highland Cattle is an old strain that has not been developed and solely bred on the hill, the traditional way. It has a wonderful long-in-the-mouth flavor, almost gamey in character. Highlanders lay down fat differently from other breeds of cattle, protecting their kidneys to survive the extreme climate. The marbling in the beef develops later on.

This family took on the Glengorm fold (as Highland herds are called) 50 years ago but the fold itself dates back more than 170 years when it was first documented. This particular herd is highly praised for its old strain and 100% outdoor life with feed from nature. All research led back to Glengorm. They live on the hills of Mull all year round, as they have done for well over a century. They are sustainable, thriving on the natural pasture, heath and herbs of the environment in which they live. This is apparent in their flavour. They can be used to manage and diversify marginal lands without the negative impact seen with heavier breeds. They mature for 3 years before they are slaughtered and butchered on Mull.

It is greatly appreciated by discerning chefs who appreciate the fantastic flavour ofrichard_home.jpg heritage breeds. All the lambs are traceable, born and raised on their 10 acre smallholding. The mutton and hogget is from ewes on the holding and from their flock on the Shetland Isles.

Ronnie and his family farm Uradale organically with SOPA (Scottish Organic Producers Association) Membership. They are dedicated to the heritage breeds indigenous to the Shetland Isles : Native Shetland Lamb, beef from the Shetland Cow ('Kye') and organic Native Shetland wool.

Native Shetland Lamb is now successfully marketed from the islands to a worldwidesheepdogs.jpg audience and its distinctive flavour is superb. It is protected under the Protected Designation of Origin (PDO) scheme, meaning that true Native Shetland Lamb must be born, reared and finished in the Shetland Islands.

The taste is second to none. These old breeds are dainty in size but what they lack in bulk they shetcowronnnie.jpgmore than make up for in flavour. They are traditionally reared to roam the open land, fed only by nature's herbs and spiced with local flora. Mutton and Reestit Mutton are also produced here, available from local butchers, subject to seasonal availability.

The Shetland Kye is another heritage breed, a beautiful animal with distinctive characteristics as you can see and an absolutely superb flavour of beef.

Ronnie's Native Shetland Lamb, Shetland Kye & Reestit Mutton are all on Slow Food's Ark of Taste.

deliciousLatest news, Mr C won Bronze, Silver and Gold Awards at 2016 Scotch Pie Awards - five more awards in total. Brilliant!

Robert has justly won many awards for his amazing handcrafted pies and now also has his SALSA Accreditation. Exceptional artisan, hand raised meat pies with a variety of fillings.... traditional pork (with Ramsay's prize pork), Wild Scottish Venison & Savoury Pork, Chicken & Ham and more great ideas all the time! Here is Hardeep Singh Kohli launching the Scotland Food & Drink Excellence Awards 2013. Hardeep tucked into their haggis, neeps and tattie pie. Pic by Rob MCDougall.

In 2006 Robert was one of 30 “chefs” representing the UK at Slow Food Terra Madre in Turin. He listened to farmers complaining about chefs, hotels and restaurants using mainly prime cuts of meat and not using lesser cuts of great meat – In other words NOT using the whole animal. On his return he decided to look at high quality hand-made pies.

He contacted Andrew Ramsay of Ramsay’s of Carluke and ordered small quantities ofMrCIFE.jpg pork as well as trotters to make fresh quality jelly. By 2011 he entered the British Pie Awards and won GOLD for his PORK PANCETTA and LEEK. In October 2012 he took 244 pies to Turin to Terra Madre where it all began six years before and had a great 3 days selling pies, getting wonderful direct feedback from so many international customers.

Such pies require an incredible skill to make (click on the link to see how http://aweepinchofsugar.co.uk/2015/09/23/tips-on-how-to-be-star-baker-with-your-hand-raised-pies/) and Robert goes to great lengths to source prime ingredients from local producers.

Now Robert's pies are in Roux Restaurants, served at the Ryder Cup, seen on Outlander, and many are available at Fortnum & Mason, London's top food emporium. Look out for his amazing pies in the Lakeland Catalogue too! Many congratulations, Robert

Highly respected family business rearing Scotch Assured pedigree Aberdeen Angus in the traditional way, fed on grass and grass silage. Well hung beef from the finest Border countryside. They also make excellent haggis and are regulars at local farmers' markets. Some of their pedigree stock graze at Scotland's Museum of Rural Life at Wester Kittochside - very appropriate.

Aberdeen Angus is a famous name and popular on menus across the world but arobinalison.jpg diminishing number of people realise that most of the time they are eating a cross bred animal at best (they are allowed to be called Aberdeen Angus when only sired by a bull, therefore 50% Aberdeen Angus) and black cattle at worst (in USA they need only be black in colour to be called Angus!). As farmers look towards profit and mechanisation they select species for larger conformations of cuts to the detriment of flavour and texture. The development and cross breeding of the species has created a breed that is a shadow of its former self. In contrast the original Native Aberdeen Angus is 100% pure bred from heritage, grass fed and traditionally reared beasts. This is on Slow Food's Ark of Taste.

This breed is rich in flavour, juicy and with exquisite marbling throughout. The breed, feed, flavour and hanging from these traditional methods makes for a superb product. It is versatile with all the traditional cuts - slow cooked or grilled, roasted or cured, minced or for charcuterie. Hardiesmil has full traceability on their herd and take a pride in their heritage.

Also known as Fred Ballard's. A fine butcher highly thought of by many local places to eat. Most meat comes directly from their own farm in Twynholm, a few miles from the shop. Unlike some butchers they are traditional beef and sheep farmers themselves, so know their beef!

The animals graze on the lush, rich, grassy landscapes of Galloway where they also grow their own barley for winter animal feed. Neighbouring farms and shooting estates complement their stock. Castle Douglas is well known as a Food Town and this excellent high street butcher plays a key role in the winning combo. Member of Scottish Craft Butchers.
