They have developed three cures for their cold smoked range:  Island Cure; Highland Cure and Lowland Cure. Their Island Cure is a blend of sea salt and seaweed. This family business sources the finest seafood for consumers at Farmers’ Markets and their lovely farm shop, and to chefs for prime seafood on their menus. They also create a delicious range of home smoked and cured produce including their latest with Beetroot Gravadlax with North Berwick Gin. 

They won Great Taste Awards for Roasted Smoked Salmon and Lemon and Pepper varieties and regularly wins awards from East Lothian for Best Local Produce. We should all consume at least one portion of oily fish each week - this is a very enjoyable way to meet that dietary target!

This seafood business sources all of its proddcue from the pristine waters surrounding the Outer Hebrides. They own some of the fishing vessels and also processes catch from others who land at the harbour by their buildings, where there is a beach entirely formed from scallop shells! Langoustine and scallops are caught on the Eastern Seaboard or the Minch as it is known and crabs and lobsters are prepared here too. This independent smokery takes a real pride in its tradition of creating mouth watering kiln smoked salmon, dry-cured using sea-salt crystals before being vertically hung in their brick kiln. Here it is smoked using smouldering oak shavings from used whisky barrel staves, without the use of artificially warmed air and forced ventilation. The taste is superb. They also supply maple cured hot smoked salmon, sea trout and smoked cheese from the Campbeltown Creamy that is also very popular indeed. They specialise in mail-order but also sell to a select number of quality hotels and restaurants, to outlets in Ullapool and directly to customers at the village market.

The Arbroath Smokie is one of the few foods that has been awarded PGI status... Protected Geographical Indication... such as Parma Ham and Champagne. Arbroath Smokies originated in the tiny nearby village of Auchmithie where the Scandinavian influence of its old inhabitants brought about this delightful delicacy that Iain has lovingly resurrected as it was intended in its original form.

The fishwives originally smoked the fish in halved barrels with fires underneath, trapping the smoke under layers of hessian sacking. At the start of the 20th century the first Auchmithie fisher-folk began moving to Arbroath and the process soon became known as the Arbroath Smokie, as we know it today.
